{You Pick Six} An Interview with Cookbook Author: Tracey Medeiros

Tracey Medeiros Author of The Vermont Non-GMO Cookbook

One of the things that I love most about certain books, movies and television shows is when I become immersed in a place. I’m suddenly lingering in a local coffee shop or enjoying the breeze as I ride a bike around the town square.

If you’re a fan of Scandal, at the beginning, the show conjured up their idea of Vermont. It was serenity, the forest and making jam. It was beautiful.

When I drove to Montreal several years ago, I remember driving through parts of Vermont that were so breathtaking I wanted to stop and stay there.

Now I haven’t read through each page of The Vermont Non-GMO Cookbook, but what I’ve read reminds me that I need to make visiting Vermont a priority. Not only is it a cookbook, but it’s a travel guide. The author, Tracey Medeiros, has done a fantastic job of weaving each recipe together with a profile of a local place.

Coincidentally, over the last several months I started buying Butternut Mountain Farm Maple Syrup. I was attracted to the 100% pure Vermont maple syrup label. I love supporting local business and consider the whole New England region as local. This syrup is my favorite right now and it was such a treat seeing Butternut Mountain Farm mentioned in the book! Plus, she paired it with a Maple Milkshake recipe. Yum! I cannot wait to try it!

Can you tell that I’m already a fan of this cookbook? But it’s not just me! The Vermont Non-GMO Cookbook is a finalist for a Readable Feast award in the Socially Conscious category as well as a candidate for their People’s Choice Award.

Since I was intrigued by the concept of this cookbook, I was interested to learn more about the author behind it. Let’s picture ourselves sitting in a cafe somewhere in Vermont with Tracey and resume this ongoing series with the 21st interview of You Pick Six.

What is your favorite quote?

What inspires you?
I am inspired by the love and passion for my work and the joy it brings me. I am driven by the pleasure of food and the art of cooking – it feeds my creativity. The talented contributors I feature in my books are also a source of inspiration for me.

What is some of the best advice you’ve ever received?
Be humble, work hard, and always take pride in your work – thanks Mom!

What is a favorite simple recipe to prepare at home?
Roast chicken – it’s the ultimate comfort food. I love using the leftover chicken meat in soups, salads, enchiladas and pasta dishes. Nothing goes to waste, I use the chicken carcass and bones to make a homemade chicken stock.

The Vermont Non-GMO Cookbook

How did food become an important part of your life?
I have always loved everything that is food related, even as a child I liked to cook. My dream was to one day study the art of food and its preparation. To this end, I enrolled at Johnson and Wales University where, after graduation, I quickly became interested in the sustainability movement. My love of farmers’ markets and roadside food stands led to the birth of my first cookbook, Dishing Up Vermont. I am also the author of The Vermont Farm Table Cookbook and co-author of The Connecticut Farm Table Cookbook. The fall of 2017 saw the release of my fourth book, The Vermont Non-GMO Cookbook. Each of my books seem to pave the way for my next literary adventure.

Tell me about your book.
The Vermont Non-GMO Cookbook focuses on the non-GMO and organic elements of the food system throughout the entire state of Vermont. The book’s emphasis is on food transparency – “Know What is in Your Food,” simplifying the complexity of the movement with recipes that include ingredients which do not contain genetically modified organisms. All of the farm contributors are certified organic, its food producers are either certified organic, non-GMO, or both. Each of the chefs and restaurants in the cookbook feature organic and non-GMO on their menus. Accompanying each contributor’s recipe(s) is a profile which puts a face on these folks who work so hard to positively impact Vermont’s agricultural landscape.

Homemade Harvest Bowl

This was my lunch today — leftovers from my lunches during the week. It’s healthy, filling and tastes good. I have become obsessed with these harvest bowls.

I’ve been making a concentrated effort to eat more greens and to getting my protein without soy.

Over the course of my blogging, I’ve gone back and forth between eating and drinking soy products and not. I’m back to not and don’t think I will be going back.

A favorite lunch is the Power Bowl from B.Good. I’ve never forgotten the Squash and Farro Salad that I helped make at a food blogging event a few years ago. I loved the taste and texture of the farro. I also started buying the Harvest Bowl at Sweetgreen.

These three favorite dishes are variations of the same thing. Lots of greens, sweet potato or squash, nuts, fruit, a protein like chicken or egg, cheese, a grain and other vegetables with a dressing.

I’ve been experimenting with making my own version and loving it. I make my own salad dressing and keep it on hand.

The ingredients in the salad pictured above are: baby spinach and kale, boiled egg, farro, sweet potato, trail mix, feta cheese.

Though I love this meal, I’ve been having it virtually everyday for two weeks. This coming week, I’ll be giving it a break. Variety is the spice of life after all.

Sunday Morning at Wollaston Beach

In my fantasy life, I would sit on the front porch, back deck or balcony sipping my coffee, eating my breakfast and reading a good book.

In my real life, I don’t have a front porch, back deck or balcony. But I have to be grateful for what I have and work with what I’ve got.

Wollaston Beach is just a five minute drive from me. So I started thinking. Why don’t I just make my breakfast and bring it to the beach? So I made a spinach, kale, fried egg, Parmesan cheese sandwich with rosemary and olive oil flatbread.

Then I made my coffee and used my What Would Olivia Pope Do? travel mug. It makes me wildly happy. The little things! I put on my favorite sneakers and headed out the door.

The salty beach air smelled wonderful. I mostly ignored a few ants. After all, I was in their territory. And I really enjoyed my breakfast and reading my book.

It was a nice start to my day and I enjoyed taking a few pictures while I was out there. Since I started blogging, I stopped keeping a regular diary. Instead I keep a notebook with goals, random thoughts and things that I want to remember.

Instagram is slowly becoming a daily diary of sorts. Not that I’m sharing my deepest feelings and thoughts. But I am documenting my life and being mindful of all that I have to be grateful for.

Breaking Dessert News: Ben & Jerry’s at the Prudential Center!

Did you know that Ben & Jerry’s is opening a new catering location at the Prudential Center?

My current project is in the building, so this ice cream news is very relevant information for me. Maybe for you too. My co-workers and I have been talking about it and are looking forward to the day it opens.

My curiosity always gets the best of me when it comes to dessert. Well, most things actually. But dessert too. So as I was walking by to take a picture, I saw someone getting ready to go inside this boarded up area in the picture above. I asked if he knew when they would be opening. He said by the end of this week! Let’s hope it’s true!

Let’s also hope that Ben & Jerry’s CEO Jostein Soheim will sign the Milk with Dignity Agreement as he agreed to do back in May 2015.  Solheim’s Conscious Capitalism profile says that “Ben & Jerry’s must continue to aspire to be a social justice company that just happens to make ice cream.”

Migrant Justice is an organization focused on human rights and food justice. They are working with Vermont dairy workers and have relaunched the Milk with Dignity Campaign in order to get Ben & Jerry’s to fully implement the Milk with Dignity Program.

I was disappointed to learn that there hasn’t been the follow through with this agreement as expected. We expect a lot from Ben & Jerry’s and I believe that the founders do as well. Ice cream tastes a lot sweeter when we know that workers who make the final product possible are all being treated fairly. Don’t you agree?

Yoga Trends: Is Goat Yoga Coming to New England?

Is this goat looking for a yoga class?

Who knows what goes on in the mind of a goat? I can’t say no for sure. Can you?

Based on the number of articles about goat yoga classes that I have seen lately, it looks like a trend that could be around for a while. Though it seems that humans tend to push the yoga agenda on the goats.

Goat yoga started in Oregon. Then jumped to Arizona. And now it looks like goat yoga has arrived in New Jersey. It seems that goat yoga is moving eastward.

So how about New England? Last summer I met some goats at Sakonnet Farm in Rhode Island and took the picture above. Could a goat yoga class spring up here?

Warmer weather is coming to New England soon. The time is ripe for planning fun outdoor yoga classes. Why not add goats?

Let’s hope that this fun yoga trend doesn’t leave us New Englanders behind and arrives soon.
