Recipe: Single Serving Toffee Bits Cookies

One of my favorite things in life is dessert. I wish I didn’t have such a sweet tooth. But I do. And I indulged on my trip to Nantucket early this week.

For the past few days, I’ve tried to get back to much healthier eating. But I wanted a little bit of dessert today and cannot trust myself with baking a full recipe with a few dozen cookies. So it was time to bring back Desserts With Borders!

If you’re a new reader, my Desserts With Borders series is where I create recipes for single serving desserts. I take a regular recipe and shrink it down so that it’s a small portion and there are no leftovers. So it would be like if I went to a bakery and bought a few small cookies or one muffin.

It’s cheaper to bake at home. Not that any dessert is healthy, but when I create the recipe, I know all the ingredients in these desserts and I’m at least aware of what I’m eating and can adapt the recipe to fit my preferences. Plus, these recipes are fun to do and make me happy.

So, the last time that I made a single serving dessert was waaaay back in February. It was time! This cookie recipe took in total about 20 minutes to make. That’s not too long a time if you get a sudden craving for a few cookies. I loved these and hope you try them too. If you do, please let me know!

Single Serving Toffee Bits Cookies

Ingredients + Instructions

  • 3 T butter
  • 1 heaping T brown sugar
  • 1 heaping T sugar
  • 1/4 tsp. vanilla extract
  • scant 1/8 tsp. baking powder
  • scant 1/8 tsp. baking soda
  • scant 1/8 tsp. salt
  • 1/3 cup flour
  • 1 T toffee bits

Set aside a small cookie sheet and use a small piece of parchment paper. Preheat oven to 375 degrees. I used a toaster oven and the little pan that came with it.

Combine ingredients in a small bowl until you have smooth dough. I used a tablespoon to make five small cookies. You could make two or three bigger cookies if you like or one mega cookie. I might try the mega cookie next time!

Bake at 375 degrees for 10 – 12 minutes. Remove from oven and let cool for about 5 minutes. Use a spatula to turn cookies over onto a plate. Eat and enjoy!

Free Boston Common Coffee on Monday, September 29th!

It seems that just about everyday is a celebration of some kind of food. That’s alright by me. This coming Monday, September 29th is National Coffee Day!

To celebrate, North End-based indie coffee company, Boston Common Coffee will open a brand new cafe and bakery at 89 Canal Street. Great news for North Station commuters!

Plus, they will be giving away free coffee at all four locations from 6am – 9am. Their other three locations are listed below.

  • North End – 97 Salem Street
  • Downtown Crossing – 515 Washington Street
  • Financial District – 10 High Street
If you’re in any of these areas on Monday, stop by and celebrate the day with some free coffee!

Late yesterday, I returned home from a few relaxing days in Nantucket. My mom treated me to the trip for my birthday. We had a wonderful time playing tourists. Nantucket isn’t just for summer travel! It’s beautiful in the fall too.

Celebrity Chefs: USPS Forever Stamps

celebrity chefs Forever Stamps USPSLike most people, I buy stamps a lot less than I used to. Most bills are paid online — and even though I love to write letters and send cards, I don’t do it as much as I used to. Since stamps tend to hang around for a bit, it makes sense to buy Forever Stamps.

For me at least, buying stamps now is like buying costume jewelry. It’s a fun accessory and an inexpensive way to show a bit of  personality and individual style.

Looking at the website, I see that there are Farmers Market Stamps. I love these! Maybe I need to start ordering all my stamps online, because my local post office usually never has fun stamps like these. At least when I go to get them.

In case you will soon be buying some stamps, I just learned that next week, there will be a new set of Forever Stamps making their debut on September 26th. More stamps for those of us who love all things food and cooking!

Next Friday, Celebrity Chefs Forever Stamps will be issued! They’ve picked a nice group and I appreciate the diversity as well.

The five chefs honored on these stamps—James Beard, Julia Child, Joyce Chen, Edna Lewis, and Felipe Rojas-Lombardi—revolutionized our understanding of food. Seeing cooking as a source of delight, they invited us to feast on regional and international flavors and were early but ardent champions of trends that many foodies now take for granted. As they shared their know-how, they encouraged us to undertake our own culinary adventures.

Looks like the the United States Postal Service has very good taste!
